This sweet pumpkin roti combines the nutrition of pumpkin, ragi, and jaggery into a delicious flatbread. Rich in fiber, antioxidants, and iron, it’s a healthy, wholesome treat for all ages.
Break the cashew and almonds. Heat a teaspoon of ghee in a kadai and fry the cashew and almond.
Remove the skin of the pumpkin and cut into pieces. In a thick bottom kadai, cook the pumpkin adding ½ cup of water.
Once it is cooked, smash it. Add the jaggery, grated coconut, powdered cardamom, fried cashew and almond, and the saffron.
Add the ragi flour and mix it to combine well.
Now, heat a tawa and place a ball of the dough and spread into a small circle. Sprinkle some ghee and cook on both sides to a golden brown.
A tasty and healthy sweet is ready for serving.
Instead of ragi flour, you can add either rice flour or any other millet flour also.
If you prefer steamed one than tawa roasted, you can use any steamer and cook this dough in any shape you wish!
Instead of jaggery, you can use nattu sarkarai or coconut sugar.
