Dry roast the groundnuts and remove the skin once it has cooled and keep it aside.
Smash the garlic (no need to remove the skin) and keep it.
Now, heat oil in a wide frying pan and add the mustard seeds, urad dal, groundnuts, curry leaves, smashed garlic, and red chillies and saute until they turn golden brown.
Then, add the fried gram and salt and saute until all the contents mix well keeping the flame on medium.
Now add the pori and mix gently in low flame until it mixes well with the masala evenly.
Crispy and tasty masala pori is ready. Transfer it to an airtight box once it has cooled.
