Step by step method

  • 🥣 Soaking & Grinding:

    Clean and soak raw rice, idli rice, and wheat together for 4–5 hours. Grind into a smooth, fine batter, adding water gradually.

  • 🧂 Getting the flour ready:

    Add salt and mix well. Adjust the consistency — the batter should be slightly thinner than dosa batter. Mix in chopped onions, green chillies, and curry leaves.

  • 🍳 Making adai:

    Heat oil in a deep kadai. Pour a ladle of batter into the hot oil. Wait until the adai rises to the surface, then flip. Cook for a few seconds, remove, and drain excess oil.

Tips & variations

  • Enjoy it plain or with mixed vegetable kuzhambu or idli kara podi.

  • Maintain medium flame — this ensures soft adai without soaking excess oil.
