This Sweet Corn Paneer Vegetable Soup is a colourful, comforting bowl that brings together the natural sweetness of corn, the crunch of fresh vegetables, the softness of paneer, and the nourishment of drumstick leaves and ragi. Sweet corn provides natural sweetness, fibre, and quick energy. Paneer adds high-quality protein and calcium, while broccoli and bell peppers supply antioxidants and Vitamin C. Drumstick leaves contribute iron, plant protein, and immunity-boosting nutrients. Ragi flour thickens the soup naturally while offering calcium and fibre. Together, these ingredients create a bowl that supports digestion, immunity, and long-lasting satiety.
Cook the sweet corn and remove the kernels. Take kernels from 1½ corn in a mixie jar and grind with a little water to make a smooth paste.
In a thick-bottomed pan, pour the ground corn mixture and bring it to a gentle boil.
Add carrot and beans first. Once they soften slightly, add broccoli and mix well. Add the blanched drumstick leaves.
Add the remaining corn kernels and paneer cubes. Season with salt.
Mix 1 tbsp ragi flour in ½ cup water without lumps. Pour this into the boiling soup and let it cook on medium heat.
Add pepper powder and simmer for 2–3 minutes. Serve hot.
Serving Suggestions: Serve hot as a light dinner or evening meal. Pair with toasted whole wheat or millet bread. Add a squeeze of lemon for a fresh finish. Sprinkle extra pepper for a spicier version.
Replace ragi flour with oats powder for a different healthy thickening option.
Add a few drops of sesame oil or butter for enhanced flavour.
Increase paneer for a protein-rich meal.
For a creamier version, add 1–2 tbsp of milk at the end (optional).
Add spinach instead of drumstick leaves when not available.
