A north Indian tasty paratha made of Pearl Millets
Wash methi leaves & coriander leaves, pat dry and chop that.
Make a paste of the ginger and garlic.
In a bowl take the mashed potato, chopped methi and coriander leaves.
Add green chillies, coriander powder, cumin powder, asafoetida, red chilli powder, ginger & garlic paste, salt and mix well.
Knead the mix
Add pearl millet flour and wheat flour with the already kneaded mix.
Add water little by little and knead again to make a semi soft dough. Apply oil over the dough and keep it aside for some time.
Make dough balls. Roll thick paratha, if required add dry pearl millet flour or wheat flour.
Heat tawa well. Place rolled paratha on it and cook on medium flame. Flip the paratha and apply ghee (or oil )over the roasted part. Cook both sides.
Serve hot with curd, butter or any chutney.
