This Palak Veggie Soup with Paneer is a soothing, nutrient-rich bowl made from fresh spinach, peas, carrot, herbs, and gentle spices. It’s light yet satisfying, naturally creamy without any cream, and beautifully balanced with soft paneer cubes. Made with minimal ingredients and clean flavours, it’s ideal for a quick meal, evening comfort bowl, or a wholesome dish on days when you want something warm and nourishing.
Spinach brings iron, folate, and antioxidants that support energy and immunity, while peas and carrot add fibre and natural sweetness. Ginger, garlic, and pepper warm the body and aid digestion. Heat 1 tsp oil in a pan. Add ginger, garlic, and green chilli. Sauté for a minute.
Add carrot, spinach, green peas, and salt. Mix well.
Add jeera, crushed pepper, mint leaves, and coriander leaves.
Pour 1 cup water, close the lid, and cook until the vegetables turn soft.
Allow the mixture to cool. Transfer to a mixie jar and grind into a smooth paste.
Pour the soup back into the pan. Add water to adjust the thickness. Add paneer cubes and warm gently on low flame (do not boil).
Serving Suggestion: Serve warm as an evening soup or pair with toasted bread or millet roti for a light meal.
Add sweet corn for extra sweetness.
For a richer version, add 1 tsp coconut milk or ½ tsp ghee while warming.
