Moong dal with Brinjal sambar for Pongal
Dry roast the moong dal in a kadai until it turns to golden colour and you get a nice aroma, sauteing it continuously.
Add 4 cups of water and cook it for 3 to 5 minutes. Remove the dust collected above.
Add the brinjal, onions, tomatoes, and green chillies and cook until the dal and brinjals become soft.
Add salt and mash the content. Reduce the flame medium.
Heat ghee in a small frying pan and add mustard, urad dal, cumin seeds, curry leaves, and asafoetida and add to the sambar.
Finally, add the coriander to it and put off the flame.
Tasty brinjal sambar is ready for serving with the healthy millet pongal!
