Step by step method

  • Step 1

    Dry roast the moong dal in a kadai until it turns to golden colour and you get a nice aroma, sauteing it continuously.

  • Step 2

    Add 4 cups of water and cook it for 3 to 5 minutes. Remove the dust collected above.

  • Step 3

    Add the cut vegetables, onions, tomatoes, and green chillies and cook until the dal and brinjals become soft. Add salt and mash the content. Reduce the flame to medium and let it cook.

  • Step 4

    Heat ghee in a small frying pan and add mustard, urad dal, cumin seeds, curry leaves, and asafoetida and add this to the sambar.

  • Step 5

    Finally, add the coriander to it and put off the flame.

  • Tasty mixed vegetable sambar is ready for serving with the healthy millet pongal!
