Recipe for a Healthy Lunch Item Using Millet
Cook the millet rice either in a vessel or in a pressure cooker and transfer the cooked rice to a plate and let it cool. Method for cooking millet rice is given separately:
Heat the ghee in a small frying pan and fry the cashews until they turn golden. Transfer it to a bowl and let it cool.
Heat the oil in a frying pan and add the mustard seeds, urad dal, chana dal, red chilli, green chilli, curry leaves, ginger, and turmeric powder and saute them until they turn golden brown.(add them one after the other in the same order, giving time for each item to cook)
Now add the grated (raw) mango to this and saute it for 3 to 4 minutes.
Add the millet rice and mix well until the rice combines well with the mango mix.
Add the roasted cashews and finally the coriander leaves.
Millet mango rice is ready for serving.
Side dish: Potato fry is a very good combination for this millet mango rice. Brinjal and potato curry will also be an interesting choice.
