A Simple Recipe for a Millet Idli
Soak the Samai rice for 4 hours. Soak urad dal for 2 hours. Soak the fenugreek and caster seeds together for 4 hours.
Grind the urad dal, fenugreek and caster seed together by adding water as and when required until the flour comes fluffy.
Grind the Samai rice separately.
Mix both together adding the salt and ferment for 4 to 5 hours.
Idli batter is ready for making idlis.
Side dish: Coconut chutney, groundnut chutney, tomato kurma or sambar.
