Heat the oil in a frying pan and add the ladies finger, green chillies and ginger and saute until the stickiness of the ladies finger goes away.
Dissolve the tamarind in 4 cups of water and extract the water in a bowl, let it be a very thin extract.
Add this tamarind extract to the ladies finger and add turmeric powder, chilli powder and boil it until the raw smell settles. Add the jaggery to it.
Heat the coconut oil in a small frying pan and once the oil becomes hot add the mustard seeds, urad dal, fenugreek seeds, curry leaves and asafoetida and saute for 2 minutes.
Transfer this to the ladies finger saru( kuzhambu) and put off the fire.
You can serve the millet rice hot with this ladies’ finger saru.
