Step by step method

  • Step 1

    Soak kodo millet for 4 hours. Soak the urad dal together for 2 hours Soak poha separately for one hour.

  • Step 2

    Grind all of them together along with green chillies and ginger. Add salt to it and add water (if required) and mix well to bring it to dosa batter consistency.

  • Step 3

    Heat the oil in a frying pan, once the oil becomes hot add mustard, jeera, chillies, asafoetida and curry leaves and saute well.

  • Step 4

    Add the vegetables and cook for 3 to 4 minutes.

  • Step 5

    Transfer this content to the batter and mix well. Heat a tawa and make uthappams.

  • Tasty and healthy varagu millet uthappam is ready for serving!

Tips & variations

  • Note: Sprinkle oil on the uthappam and cover the pan with a lid and cook on medium flame till the uthappam becomes crisp. Flip and cook the other side. If you do not like adding cabbage, you can avoid using it. If millet flakes are not available you can add red rice poha.

  • Side dish: Serve with any of these: Coconut chutney, Tomato chutney, Idli kara podi, and Sambar.
