Recipe for a Healthy Breakfast/ Dinner Using Millet
Dry roast the moong dal in a kadai until it turns to golden colour and you get a nice aroma, stirring it continuously. Transfer to a plate and keep it aside to cool.
Clean the kodo millet and moong dal and soak them together for 30 minutes.
Heat 1 tablespoon of ghee in a cooker and add cumin seeds, pepper, green chillies, ginger, and curry leaves and saute them for 3 to 4 minutes.
Add water and let it come to a boil. Now add the millet and dal with the contents in the cooker, and stir well to combine.
Add salt and stir once again and close the cooker with the lid. Cook it for 2 whistles. Reduce the flame to a minimum and cook for 3 to 5 minutes and put off the stove.
Heat the remaining ghee in a frying pan and add the cashews, badam and a few curry leaves and saute them until they become crispy
Finally, add the coriander leaves and transfer the content to the pongal and mix gently to combine all.
Tasty and healthy millet pongal is ready for serving.
Side Dish: Moong dal and Brinjal sambar is a good combination for this millet pongal along with Coconut chutney
