Recipe for a Healthy Lunch Item Using Millet
Cook the millet rice either in a vessel or in a pressure cooker and transfer the cooked rice to a wide vessel and let it cool.
Dry roast the groundnuts and remove the skin and keep it aside.
Heat the ghee in a small frying pan and fry the cashews until they turn golden.(if using cashews)
Heat the oil in a frying pan and add the mustard seeds, urad dal, chana dal, red chilli, curry leaves, and turmeric powder and saute them until they turn golden brown.
Now add the lemon juice to this and immediately put off the heat.
Transfer this to the millet rice and mix well until the rice combines well with the juice. Add the groundnuts and the cashews(optional) to the lemon rice and mix well.
Kodo millet lemon rice is ready for serving.
Side dish: Potato fry is a very good combination for this millet lemon rice. Brinjal and potato curry is also a great choice. Simply, you can serve this with potato chips also.
Note: You can add a few small onions, finely chopped and green chillies while sauteing in step 4. This will give a unique taste.
