Simple Upma made Healthy with Millet – Easy to cook recipe
Clean the foxtail millet and soak it in water for 30 minutes.
In a kadai, heat the oil and add the mustard seeds and cumin seeds and saute them.
Add the tomatoes, capsicum, and ginger and cook for 2 to 3 minutes.
Now, add the carrot, beans and green peas and cook for another 3 to 4 minutes, by that time the vegetables would have become soft.
Add the foxtail millet to the vegetables being cooked and stir it to combine with the vegetables.
Add the water and bring to a boil. Now, reduce the heat to low and cover it with a lid. Cook until the water is absorbed and the millet is cooked well.
Finally, add the coriander leaves and switch off the stove.
Tasty millet vegetable upma is ready for serving.
Note: You can add one tablespoon of ghee once the water is absorbed. If you are adding ghee, reduce the amount of oil accordingly
