In a large mixing bowl, add foxtail millet flour, kodo millet flour, onions, grated coconut, green chillies, ginger, curry leaves, coriander leaves, and salt. Add 2 tbsp til oil and mix gently.
Sprinkle water little by little and mix to form a soft dough. Add the remaining 2 tbsp til oil and knead well. Cover with a wet cloth and rest for 30 minutes to 1 hour.
Lightly grease the backside of a banana leaf (optional). Take a ball of dough and flatten it into a thin roti. (Alternatively, shape directly on the tawa.)
Heat a tawa on medium flame. Place the roti gently onto the tawa and peel off the leaf. Cook for 1–2 minutes on each side until lightly browned.
Serving Suggestions: Coconut chutney; Tomato chutney.
Add finely chopped spinach or methi leaves for extra nutrition.
A spoon of sesame seeds can be added for flavour and calcium.
Make slightly thicker rotis if you prefer a softer texture.
