Coconut Rice is one of the simplest and most comforting South Indian variety rice dishes. With the gentle aroma of roasted coconut and the crunch of nuts and tempered spices, this dish is light yet flavourful. Perfect for lunch boxes, temple-style meals, or a quick weekday lunch, Coconut Rice brings together freshness, simplicity, and tradition in every spoonful.
Fresh coconut provides healthy fats that support energy and satiety. Peanuts and cashews add protein and crunch, making the dish more nourishing. With minimal spice and clean flavours, Coconut Rice is gentle on the stomach and suitable for all ages — an ideal simple meal on light-food days.
Cook the rice in a vessel or pressure cooker. Spread it on a plate to cool completely.
Dry roast the groundnuts, remove the skin, and set aside. Heat ghee in a small pan and fry the cashews until golden.
Heat oil in a frying pan. Add mustard seeds, urad dal, chana dal, red chillies, green chillies, and curry leaves. Sauté until golden.
Add the tempering to the cooled rice and mix gently. Dry roast the grated coconut until aromatic and add it to the rice. Finally, add roasted groundnuts and fried cashews. Mix gently to combine.
