A simple poriyal that turns into a fragrant coconut rice — two delicious dishes in one recipe.
This Coconut Poriyal is a classic South Indian side dish that brings together the sweetness of fresh coconut, the crunch of dals, and gentle warmth from spices. The best part? With just a bowl of hot rice, this poriyal instantly transforms into a fragrant Coconut Variety Rice. Light, wholesome, and fuss-free — this is the perfect two-in-one recipe for days when you want flavour without effort.
Fresh coconut provides healthy fats and natural sweetness, while carrots add fibre and antioxidants. Curry leaves, pepper, and green chillies gently support digestion. This poriyal becomes a nutritious, balanced meal when mixed with rice — simple ingredients creating both wellness and flavour in minutes.
In a bowl, mix grated coconut and grated carrot with turmeric powder, chilli powder, pepper powder, and salt. Let it rest for 10 minutes to absorb the flavours.
Heat oil in a kadai. Add mustard seeds, urad dal, and chana dal. Sauté for 2 minutes until golden.
Add slit green chillies. Add sliced onions and curry leaves. Sauté until the raw smell disappears.
Add the seasoned coconut–carrot mixture. Mix well and cook on low flame for 2–3 minutes, just until the aroma turns fragrant. Do not overcook — coconut should remain soft.
Add coriander leaves and groundnuts (optional). Mix gently and remove from heat.
Add warm cooked rice to the prepared poriyal, drizzle a little ghee or coconut oil, and mix gently. Within minutes, your Special Coconut Rice is ready — aromatic, wholesome, and satisfying.
Serving Suggestions: Coconut Poriyal pairs well with sambar, rasam, vatha kuzhambu, or curd rice.
