Tasty sambar with a vegetable for idli or dosa!
Heat oil in a kadai. Add mustard seeds, chana dal, urad dal, red chillies and cumin seeds in the same order and saute them.
Add onions, curry leaves and sauté until the onions are fried well.
Add tomatoes and sauté until it becomes soft.
Add turmeric powder and 1/2 teaspoon salt. Now add the soraikkai and sauté until it mixes well with the other ingredients.
Add a cup of water and close the kadai with a lid, let the vegetable cook for 5 minutes on medium flame.
Now, in a mixie take the coconut, fried grams, ginger, green chillies and add a little water and grind it to a fine paste.
Add this coconut paste to the kadai and mix well. Add 1/2 teaspoon salt and one cup of water. Again close the kadai with a lid and cook for 5 more minutes on medium flame.*
Once the vegetable is cooked soft, switch off the flame. Finally, add the coriander leaves.
Healthy and tasty bottle gourd sambar is ready!
Note:* Add more water if required, the sambar should be watery. It will become thick once cooled as we are adding fried grams. wheat
