Recipe for a Healthy Lunch Item Using Millet

Step by step method

  • Step 1

    Cook the millet rice either in a vessel or in a pressure cooker and transfer the cooked rice to a wide vessel and let it cool. Method to cook the millet is separately given:

    Dry roast the groundnuts and remove the skin and keep it aside.

  • Step 3

    Heat the ghee in a small frying pan and fry the cashews until they turn golden.(if using cashews)

  • Step 4

    Heat the oil in a frying pan and add the mustard seeds, urad dal, chana dal, and red chilli and saute them until they turn golden brown.

  • Step 5

    Add green chilli, onion, curry leaves, and turmeric powder and saute them for 3 to 4 minutes.

  • Step 6

    Now add the lemon juice.

  • Step 7

    Add the millet rice and mix well until the rice combines well with the juice, keeping the flame in low.

  • Step 8

    Add the groundnuts and the cashews(optional) to the lemon rice and mix well and put off the flame.

  • Kuthiraivali millet lemon rice is ready for serving.

Tips & variations

  • Side dish: Potato fry is a very good combination for this millet lemon rice. Brinjal and potato curry is also a great choice. Simply, you can serve this with potato chips also.
