Step by step method

  • Step 1

    Cook the jackfruit seeds in a pressure cooker for 3 whistles and simmer for 5 minutes. Remove the skin and cut into pieces and keep it aside.

  • Step 2

    Cut the brinjal lengthwise and put in water in a bowl. Cut the drumstick into 2 inch pieces and put it along with brinjal.

  • Step 3

    Heat the oil in a kadai and add the mustard seeds, urad dal, and onion and saute until the onions turn glossy.

  • Step 4

    Add ginger and garlic paste and saute well until the raw smell settles.

  • Step 5

    Add the chilli powder, dhania powder, turmeric powder and salt and saute for a few more minutes.

  • Step 6

    Now add the brinjal, drumstick, and mix well. Add a cup of water and cook the vegetables on medium flame.

  • Step 7

    Once the brinjal and drumstick are cooked well, add jackfruit seeds and saute well to mix with the masala.

  • Step 8

    Cook in low heat for 5 minutes and turn off the flame once the raw smell settles.

  • Brinjal, drumstick and jackfruit seeds curry is ready to be served with millet curd rice.

  • Brinjal, drumstick and jackfruit seeds curry is a good combination to be served with millet curd rice or any variety rice.

  • The same method can be followed for brinjal and drumstick curry when jackfruit seeds are not available!
