Yummy side dish for curd rice!
Cook the jackfruit seeds in a pressure cooker for 3 whistles and simmer for 5 minutes. Remove the skin and cut into pieces and keep it aside.
Cut the brinjal lengthwise and put in water in a bowl. Cut the drumstick into 2 inch pieces and put it along with brinjal.
Heat the oil in a kadai and add the mustard seeds, urad dal, and onion and saute until the onions turn glossy.
Add ginger and garlic paste and saute well until the raw smell settles.
Add the chilli powder, dhania powder, turmeric powder and salt and saute for a few more minutes.
Now add the brinjal, drumstick, and mix well. Add a cup of water and cook the vegetables on medium flame.
Once the brinjal and drumstick are cooked well, add jackfruit seeds and saute well to mix with the masala.
Cook in low heat for 5 minutes and turn off the flame once the raw smell settles.
Brinjal, drumstick and jackfruit seeds curry is ready to be served with millet curd rice.
Brinjal, drumstick and jackfruit seeds curry is a good combination to be served with millet curd rice or any variety rice.
The same method can be followed for brinjal and drumstick curry when jackfruit seeds are not available!
