An Easy to Prepare Recipe
Wash the millet and soak it for 30 minutes.
Take the water in a thick bottom vessel and heat it. Once the water starts boiling add the millet and salt. Cook it in medium flame until the millet becomes soft. Drain the excess water and transfer the cooked millet to a plate and let it cool.
Heat oil in a kadai and add the mustard seeds and urad dal and saute them.
Then add the curry leaves and green chilli and saute them. Add the onions and saute it until it becomes transparent.
Add the tomato and saute until it becomes soft.
Add turmeric powder, chilli powder, and garam masala and mix them well.
Add the cooked millet rice to this and mix gently and it combines well with the masala.
Heat the ghee in a small frying pan and fry the cashews until they turn golden brown. Transfer the fried cashews to the tomato rice and add the coriander leaves finally.
Yummy tomato millet rice is ready for serving.
Side dish: You can serve this tomato millet rice with simple onion raita. Chips or any fries also will be a good combination. Any vegetable curry also can be added to this as a side dish.
